Not sure if anyone remembers that I posted about the Laksa paste that doesn’t taste at all like Laksa a few posts ago (“switcheroo“)? Well, today, I decided to use up the last two portions’ worth of yellow Chinese noodles and recreate the Tom Yum Laksa hybrid (I still have many more packets of the stuff!). I don’t have any more bean sprouts though, and no money to dash out for fresh prawns, so I made do with a hard boiled egg and spinach.

Voila! Another hybrid meal made from leftovers and a slight paradigm shift. Lunch and dinner today. Most filling too!
