Throw leftovers and other bits and bobs together… and you have an all purpose topping!
Here, I stir fried chicken bits (skin and trimmings – I know, the health nuts would freak out but hey, I am not going to waste anything edible and yummy!), then tossed in the remainder of the tinned tomato and sauce, leeks that I cooked yesterday, and chopped olives. Voila! The all purpose topping for all kinds of bases!
It didn’t last long. I ate half of it with noodles and the other half by itself for a teatime snack! 🙂
